Ingredients
1/2 cup of brown rice or white rice
4 cups of Soy Milk (for really creamy pudding use whole milk)
1/4 dry fruits(shredded almonds, cashews, raisins)
1 teaspoon Cardamom seeds
Pinch of Saffron or 6-8 drops of Rose water
Method
Wash the rice and soak them in 1 cup of water for half an hour to 45 minutes.
Drain the rice and add milk to rice in thick heavy vessel, like pressure cooker.
When it comes to boil simmer on low heat for 1- 1 and half hours. Keep stirring
it and keep scraping the sides to prevent sticking and burning.
When it is thick and creamy add sugar and stir it for 3 minutes. Remove it
from heat and add dry fruits, Cardamom seeds, rose water and saffron.
You can serve it hot or cold.
